I love Chapatis, its a really simple recipe.Though the key to a good chapati is to get the dough to rise.Don’t worry you dont need any baking powder for this.Simply use a spatula to press the sides as you cook the dough, this will trap air on the sides allowing them to make the centre rise up.This gives teh chapati a softer lighter texture and you can peel off pieces easily.

Thanks. The problem remained for the rest of the trip. We had good days and bad days. On the bad ones we had to just stop and let it cool down. It was fine at speed, so normal car driving. As it got plenty of air to keep it cool, it was just in low range it was overheating.
